From the number of recipes that were posted in 2007, I assume that most of you are catch and release fisherman, but for those of you who eat some of their catch, the attached recipe is pretty good!
Cilantro Butter 1 stick unsalted butter, softened 1/4 cup chopped cilantro Juice of 1 lemon or lime 1 teaspoon lemon or lime zest Salt and pepper to taste
Dolphin 4 (8-ounce) dolphin steaks Olive oil Salt and pepper to taste
Combine all cilantro butter ingredients in a bowl. Mix by hand or with a mixer. Shape into a log. Wrap and freeze for about 1 hour. When ready to cook, preheat grill. Rub dolphin steaks with oil and season with salt and pepper. Grill steaks for about 10 minutes, turning once. Transfer to a serving platter and top each steak with a slice of cilantro butter.
Yield: 4 servings

I cant ever get enough cilantro and it goes great with Dolphin. Kroger has some Tanjin spice in a small plastic spice bottle located back near the tortillas. Add some of that instead of black pepper. Mighty tasty.
